If making these for an event, you can bake the mini cakes a day ahead of time, and store them in airtight container at room temperature. Make the cream cheese frosting and assemble the day of. You can also freeze the mini cakes without cream cheese frosting for up to 3 months. Allow them to come to room temperature overnight before assembling and serving.
